SIT Release 2: Eight New Cookery Units Have Arrived!

Didasko Learning Resources is pleased to announce the launch of our SIT Release 2 content with eight new Cookery units. The following units are now available to add to your learning management system:



  1. SITHCCC023   Use food preparation equipment
  2. SITXFSA005    Use hygienic practices for food safety
  3. SITXFSA006    Participate in safe food handling practices
  4. SITHCCC027   Prepare dishes using basic methods of cookery
  5. SITHKOP009   Clean kitchen premises and equipment
  6. SITXINV006    Receive, store and maintain stock
  7. SITHCCC029   Prepare stocks, sauces and soups
  8. SITHCCC030   Prepare vegetable, fruit, eggs and farinaceous dishes

Since the government’s endorsement of the new SIT training package, the team at DLR have been hard at work to develop and deliver these units to you. Our new resources include the dynamic learning materials and reliable assessment tools you’ve come to expect from Didasko, with upgrades across the board.

DLR’s multimedia-driven digital content has never looked better, jam-packed with videos, animations, and activities to guide your students through their cookery courses. Meanwhile, the customisable assessments in each unit are designed to engage your students and meet the needs of academic outcomes.

SIT Release 2 endeavours to introduce the next generation of learners to current industry trends, contemporary codes of practice, and real-world professional insight. With our cookery courses delivering on these goals, there’s no better way to equip your students with the skills and knowledge they need.The release of these eight units marks the first instalment of our Cookery rollout, which will continue to grow and gain momentum throughout 2022. Each batch of releases works towards delivering the full set of units for the following qualifications:

  • SIT20421: Certificate II in Cookery (previously SIT20416 Certificate II in Kitchen Operations)
  • SIT30821: Certificate III in Commercial Cookery (previously SIT30816 Certificate III in Commercial Cookery)
  • SIT31021: Certificate III in Patisserie (previously SIT31016 Certificate III in Patisserie)
  • SIT40521: Certificate IV in Kitchen Management (previously SIT40516 Certificate IV in Commercial Cookery)

As we transition into the new training package, training institutions will have a year to complete assessment and training in superseded units. We intend to spend this time developing our range of SIT courses, so our updated cookery, hospitality, travel and tourism qualifications are deliverable by the end of the teach-out period.
